Onion

An onion (Allium cepa) is a bulbous vegetable belonging to the genus Allium, which also includes garlic, leeks, and chives. It is one of the oldest cultivated crops in human history, believed to have originated in Central Asia and widely grown for over 5,000 years. Onions are characterized by their layered structure, formed by modified leaves that store nutrients. They are rich in vitamin C, vitamin B6, folate, potassium, and powerful antioxidants such as quercetin and sulfur-containing compounds, which contribute to their distinctive aroma and health benefits. When an onion is cut, it releases a volatile compound called syn-propanethial-S-oxide, which irritates the eyes and causes tearing.

Onions come in several varieties, including yellow, red, and white, each differing in flavor intensity and culinary use. They are fundamental in global cuisines, serving as a base ingredient in countless dishes due to their ability to enhance flavor through caramelization and the Maillard reaction. Beyond culinary uses, onions have been traditionally valued in folk medicine for their antibacterial, anti-inflammatory, and heart-protective properties. They grow best in well-drained soil with ample sunlight and are cultivated worldwide, with major producers including China, India, and the United States.
